A small town in Tuscany, ancient red brick and stone, narrow cobbled streets winding around the contours of the hill upon which it is built, a few shops, all closed now, as it is siesta time. The only sign of life comes from the doors of a bar, an appetising aroma of espresso coffee wafting out to give hope of food and sustenance to the tardy traveller. If you’re lucky it will be one of those bars that provide a fine array of freshly made sandwiches and pastries.

Italian bars are not primarily about drinking…alcohol that is. Coffee is their staple, the reputation of the barista stands or falls on the espresso he produces.  (A fine, literary example is provided in ‘The Food of Love’ by Anthony Capella. Set in Rome, the barista is forever tinkering with his coffee machine in pursuit of the perfect coffee, cannibalising his van to add parts to the machine to build up ever-higher pressure.)  Bars provide a social function: most of the neighbourhood will pass through the bar during the day, for a breakfast cappuccino and brioche (pastry), mid-morning espresso and regular doses of the same throughout the day. Even today most people stop work at lunchtime for a two or three hour siesta break, then work until 7 in the evening. 

Anyone with any respect for their digestion would take a leisurely lunch either at home or in a restaurant or trattoria, but for those in too much of a hurry, wanting food on the go, the bar provides the equivalent of ‘fast-food’: tramezzini (sandwiches made with sliced bread, usually intended to be toasted), panini (filled rolls of all sorts), pastries both sweet and savoury, ice-creams. Of course quality varies – at worst a sad selection of curling-edged tramezzini, at best an enormous variety of breads and fillings, tantalisingly displayed and beautifully wrapped, if you intend to take away.

My memories of the best include: Nannini’s in Siena, where it can take hours just to choose; the bar in the main square of Colle di Val d’Elsa (Bassa), where you could get a slice of flaky-pastried pie filled with spinach, ricotta, egg and more that melted in the mouth and ice-cream that kept you there all day, just to try all the different flavours; a simple bar on the main road below Monteriggione, which would make you up a panino fresh, with a crusty roll and ample slices of  prosciutto, carved straight from the ham, as you waited; a bar on the Via di Citta in Siena near the Duomo, which had the best breakfast brioches ever, tempting you beyond the sensible ‘just one’, into the realms of second cappuccino, second brioche and beyond!  

It is eight years since I was last in Tuscany, (having children put a halt to travelling for a while), but I am sure that those bars still endure, serving coffee and food, the same mouth-watering treats: Tuscan ‘fast-food’ at its best.

Basil is my favorite of all the herbs because it is so versatile and easy to grow. Those of you who follow my recipes site will know that I like to grow my own herbs and as basil is normally ready to eat just 6-weeks after planting I naturally use it often.

Basil is an attractive annual, about 18 inches (450 mm) tall with light-green, fairly broad leaves. There are several species of cultivated basil, one having purple leaves, so it is also a decorative plant in your garden.

Basil grows easily from seed planted after all danger of frost has passed. Pinch stems when the plant reaches 18 inches (450 mm) tall to promote bushy, compact growth. Avoid lush growth as it may reduce the flavor.

Green leaves can be picked about 6 weeks following planting. It is best to cut leaves for drying just before flowers open. However, if you can use fresh the taste is far better and it is also an extra vegetable to compliment a healthy diet.

Spicy-scented basil leaves are one of the most popular of all herbs used in cooking. There are two particular ways I like to use basil; the first, and most common, is to mix it with pine nuts and a little garlic, a splash of balsamic vinegar and extra virgin olive oil in a blender to make Pesto. Pesto can be kept for a few days in the refrigerator. Use about 90% basil to 10% pine nuts.

The other way I like using basil is with freshly picked tomatoes, sliced, drizzled with extra virgin olive oil and sprinkled with chopped basil. This dish can be served alone as an appetizer or as part of a salad.

The other great thing about basil is that you should grow one basil plant between each tomato plant in your garden. The plants compliment each other and the basil acts as a deterrent to many of the bugs that like tomato. It never fails to amaze me the way nature has a habit of making complimentary plants that together protect each other in growth and them compliment each other on the table.

Top chef's use basil with all tomato dishes, whether cooked or raw. The other thing to remember about using olive oil is that it is an omega 3 oil and very good at promoting "good" cholesterol.

What better on a cold winter’s night, than to come home to a supper of crisp-skinned baked potato, piping hot, a knob of butter soaking into the fluffy centre. Perfect for days when you get home in good time but have a million things to do and cooking supper is last on the list. All you have to do is get the oven hot (200C), fling them in, (with a cross scored on the top, so they don’t burst and coat your oven with an irremovable patina of flaked potato) and leave them there for at least an hour, better an hour and a half. You can get on with everything else, secure in the knowledge that supper is cooking without you and then put together a few fillings at the last minute.

One of  my favourite toppings is tuna. Just open the tin, drain, season with salt and pepper and some lemon juice (feel free to add mayonnaise if you like it but we don’t). Other hassle-free accompaniments are baked beans, grated cheese, left-over juices from last night’s stew. Any of these makes a tasty, nutritious meal with no fuss and best of all, one that most kids will eat...an enormous plus point for mothers everywhere.

A microwave hastens the process but leaves you with thin skinned potatoes that might do as an accompaniment to something else but lose the crisp appeal of the true oven baked article. If you are in a hurry, cook pasta instead and save your jacket or baked potatoes for a day when you remember to switch the oven on in time.

A variation to try with smaller potatoes: after washing, drying and scoring the potatoes, rub the skins with a little butter, then season with salt and pepper before baking to give you extra crispy, tasty skins that everyone will eat.

Another thing to try if you want to get fancy: once the potatoes are cooked, halve them, scoop out the insides, mix with a beaten egg, grated cheese, salt and pepper, heap the mixture back into the skins and return to the oven for another 15 minutes until the tops are golden brown. A meal in itself!

Cheap, filling, nutritious with the right toppings and needing the minimum investment of labour, the baked potato is every busy mother’s ideal supper!

Whenever I hear someone say they hate television it amazes me.  My next question is always “what do you watch?”  I never seem to get a straight answer.  With the advent of cable television and satellite tv, there is always something on.

For food lovers, food network has to be the best thing on television since Julia Child was on the air.  Between the celebrities that do the cooking, and the topics and recipes that they pick, what else could you ask for. It really was an ingenious concept, a food channel that is on 24 hour a day all about food. It is even a better fit than the golf channel, or the history channel or any other channel because everyone eats.

Once you add the personalities of the ”Celebrity Chefs”  to the shows, you can only have a winning formula.  Rachael Ray is definitely my favorite, it seems as if, just like all of the chefs that she is always in a great mood, which is always refreshing. Then there's Emeril, who must be the most popular, has combined an open forum with music and celebrity guests.  For Emeril to be the standout for food network makes perfect sense, his knowledge of food is unbelievable, he is very easy to like for men and women, and he likes to have fun.  It's almost as if  you're in his house while he's cooking

I don't think that I have ever watched Alton Brown's Good Eats, and not learned something.  His information is a lot of did you know, that you probably did not know.  Paula Dean's  southern style is always warm and friendly.  There is a show everyone, which should be the goal of all television networks

Food network was a very welcome addition to cable tv land, with the technology of digital cable and tivo, you can have all your favorite shows ready to watch whenever you want.  Can you imagine back in the day being able to watch Julia Child whenever you want?

Another reason we love food network is their website.  It is very informative and anything you see on television you can get from their website.  Everything from the recipes that you see, to the actual video.  It is pretty easy to navigate and find what you are looking for. Their online store has everything from cookbooks to cooking utensils. With food network becoming more and more popular, we can only hope that it grows and expands to cover more topics and foods.

With US$5 billion market in the United States alone in 2003, a 500% increase in 10 years, tea is a well established industry that is quickly growing.   Tea bags, loose teas, tea shops, and gourmet teas are only a few examples of the outlets for this ever increasing number.  Though sales have been mainly rooted in the standard teas stemming from the Camelia sinensis plant (Green tea, Oolong tea, and Black tea), a vast increase in herbal and natural medicines in the western world has brought upon a virtual explosion of Organic Herbal Tea Blend, releasing any confinements there may have previously been. 

Now it is not only Big Business that is apart of this industry as the infinite number of herbal tea blends are combing with the free commerce of the internet.   This conception is creating new life in an industry that had been patiently waiting.  New companies are forming, new mixtures are being created, and now even new tea bags are being designed. 

The machine manufactured tea bags are still standard in market where cost is being put before quality.  A metal staple is used to close a bag filled with low quality tea dust, which is known to have very low health benefits and give a more bitter taste than its whole leaf loose tea counterpart.   Due to the manufacturing techniques used by these production factories, tea dust is the only filler able to be injected with the machines used to mass produce these bags.  As the general size of each organic herbal tea blend is larger, they are unable to be used with these processed bags.  

Second in popularity is a relatively new pyramid shaped tea bag.  A more spacious bag allows for a free floating of the loose tea that is inside.  Though higher in quality than the stapled standard, problems of this style include a large shape and size that makes bulk packaging difficult.  Also, most bags are filled with green and oolong loose teas, as opposed to organic herbal tea.  

With the combined short falls of these two bags, the ever increasing number of organic herbal tea blends and home based companies are in desperate need for a tea bag to match their unique nature.  Fortunately as the number of companies is increasing, and more money is entering into the market, handmade gourmet tea bags are being created, better matching the ingenuity behind each organic herbal tea blend.  It is very possible that as the number organic blends increase in popularity, raising the desire for organic products and higher health benefits, consumers will be more willing to pay slightly higher prices to receive significantly higher in quality tea bags.  With this in mind, it very well could be that a unique organic herbal tea blend could be your gateway to differentiation in a busy tea industry.

Multi-level marketing companies came under a lot of fire in the 1990’s and early 2000’s for allowing its distributors to claim cure-all properties for noni. Governmental organizations such as the Food and Drug Administration in the United States, the National Food Administration in Finland, and others have issued warnings to those distributors, forcing them to publish disclaimers about their products. Since then, the market for noni fruit products has shaped up as more people become educated about the truths and falsehoods surrounding the fruit.

Some marketers have claimed that the only real noni fruit, in all of its health benefit glory, is that which comes form the Polynesian Islands. In fact, all noni fruit is the same, wherever in the world it grows. Noni is the Polynesian name for the tree. Its scientific name is Morinda citrifolia, but it is also widely known as Indian mulberry, among other names.

Another noni fruit scam, still in use by various private promoters, is to pollute Internet search engines by directing such phrases as “noni fruit scam” to unrelated websites. Various “warning” sites have cropped up as a result, exposing the scams to consumers.

Unfortunately, the backlash against the noni fruit scam has been too extreme. Many people are going out of their way to prove that noni fruit is actually bad for you.  While there are some potential side effects, including diarrhea, noni fruit is a generally nutritious and valuable food overall.

The acai berry is is strange in the way that only 10% of the berry is actually edible, the main reason for this is it has a large stone which takes up most of the berry. It is a dark purple berry slightly smaller than a grape, acai is more communally mixed with ice cream, meal bars and also energy drinks. The acai berry requires rapid precessing after its late harvest. 

The acai berry grows in the rain forests of the amazon in south america and is considered by some as being more than an organic fruit. These rain forests remain untouched by any sort of manufacturing, everything in this region is grown the way it was intended by nature and no mass production is add in any way. 

Pronunciation of this fruit is "ah-sigh-ee", acai, or euterpe oleracea (arecaceae) has been seen to excell in heathly attributes and greatly aids metabolism. It is highly promoted by Dr. Nicholas Perricone, a health guru and best-selling author, calling the acai a "superfood." 

It wasnt until the turn of the millenium when the acai berry was dicovered to be in north america and it hails from the palmberry tree. It usually grows in the amazon, the natives of this region cultivate the berry and have enjoying it health producing properties for many years now. Acai is usually consumed as a puree or in a smoothee or milk shake, this drink is more communally served on the Brazilian beaches and tropical resorts, although acai is an aquired taste, as it tastes mostly of wine wine with a hint of choclate. 

Acai is abundant in anthocyanins, a type of antioxidant that has been proven to combat cholesterol and free radicals, consuming acai has been proven to reduce blood related disorders and relax the blood vessels. It’s a trite but true refrain that breakfast is the most important meal of the day. For most of us, it’s been about 12 hours since our last meal and our bodies need a good refueling. Yet, statistics show that as many at 50% of us don’t eat breakfast.

We’re too busy. We don’t like breakfast foods. We’re not hungry. We’re trying to lose weight.

Sad to say, none of those reasons are valid. There are many healthy breakfasts that can either be bought or made that are fast and even portable. There’s no law that says you have to eat breakfast foods for breakfast. You legitimately might not feel hungry in the morning, particularly if you aren’t accustomed to eating breakfast. But you should eat something, even if you make a fairly light choice, like fruit and yogurt. Trying to lose weight is the worst excuse of all. Study after study shows that people who skip breakfast end up eating more the rest of the day than people who eat a solid breakfast every morning.

So how do you get the magical mix of the right nutrients that will give you energy and send you healthfully into your day?

It’s not that hard, really. Spend a little bit of time thinking about what you like and then plan some healthy breakfasts. Here are some ideas to get you started:

* If you need something portable, the ever-popular smoothie is a good choice. Be careful when you purchase a smoothie at a shop, however, as some can have as many as 600 calories. You can purchase a good blender or smoothie maker to have at home and whip up your own smoothie in less time than it takes to stop at a smoothie store, and you’ll know exactly what’s in it.

* For an even faster breakfast, try making some breakfast burritos and keeping them in the freezer. You can use regular or whole-wheat tortillas, scrambled eggs (either whole, all whites, a mix, or an egg product), some veggies like peppers and onions, and soy sausage. These freeze beautifully. Pull one out, and while you’re pouring your coffee, it can be heating in the microwave. Add a banana or apple for on-the-go dining.

* Cereal is a fine breakfast, as long as it’s not the only thing you eat. Consider adding some banana or blueberries on top, or fixing it with soy milk for a healthy dairy addition. Otherwise, stick to skim milk.

* If you don’t like breakfast, consider making a peanut butter and jelly sandwich on wheat bread. Grab a banana on the way out the door. Have some leftover vegetarian pizza from dinner? That’s a fine breakfast, though you will want to add a glass of milk or some fruit to round it out.

* Trying to lose weight? Breakfast might be the easiest meal to fill up without using a lot of calories or fat. Have oatmeal with soy milk, or a high-fiber cold cereal. Consider a homemade version of a fast-food sandwich. You can fry up an egg, add a slice of Canadian bacon and put the two into a toasted English muffin for a 200-calorie, filling breakfast.

With cooking, creativity can be just as important as the ingredients. With our busy lives, we can all get in a rut sometimes when it comes to cooking. We want simple and quick meals that we've cooked hundreds of times - no surprises! We want our children to try new, healthier foods but aren't willing to be creative and try out some new recipes. 

If you find yourself cooking the same old meals week in and week out, there's good news. Now you can try out new recipes using many of your handy ingredients and create new healthy meals easily. Here are some tips to get started.

Buy an Easy Cooking Cookbook

This might sound obvious, but you should first find a cookbook with recipes your family will love that's very easy to follow. Many cookbooks today offer only "fancy" foods packed with bizarre ingredients you've never heard of. Often, the food in these books doesn't even look tasty in the photos! Shop around online to find a cookbook that makes cooking easy and uses many of the ingredients you already keep around the kitchen. Be sure the cookbook offers your basic types of recipes such as entrees, casserole dishes, breads, fruits, veggies, beverages, and desserts.

Cookbooks also tend to favor one style of cooking, such as Santa Fe style cooking or Southern cooking. Choose one that caters to your family's taste buds, but don't be afraid to try something new.

Spice It Up

After buying a cookbook, go through the cookbook marking recipes you'd like to try for the month. You might try one or two new recipes a week just to add a little excitement to the dinner table. Write down the ingredients required, but don't forget the spices. Spices are usually what can make or break a meal. Buy spices that are required for the recipes and maybe a few extra spices for later. You can stock up on spices and keep them for a long time. When you become familiar with the new spices, you can test them in a variety of foods to enhance the flavor.

Create Menus in Advance

Preparation is the key to saving time and sticking with a meal plan. Plan menus in advance so there are no surprises. Keep ingredients on-hand that you know you will need. Most recipes give a preparation and cooking time. Plan your meals according to your schedule. Check out the available time listed for cooking. On days that you get off work late and will be rushed, find simple meals that you can cook quickly.

Prepare Mixes and Simple Foods in Advance

If you plan to make a dessert or a large meal, prepare your mixes and simple foods in advance to save time. For instance, if you plan to serve rice, potatoes, or macaroni with a meal prepare these the night or morning before and store them in the fridge. Then you'll only have to warm them up when needed. 

Cake, cookie or brownie mixes for dessert can also be stored in the fridge for later cooking. Tip: To make your flour last for months and months, store the bag of flour in the freezer. The flour itself will not freeze, but it will last a very long time.

Mix Old with the New Just to be Safe

When preparing a brand new dish, be sure to mix some old food items in the menu just in case your family dislikes the new dish. This will ensure that everyone has something to eat even if they don't like the new recipe. For example: Perhaps you're introducing sourdough bread for the first time. You can cook some regular bread along with it and present both types of bread for everyone to try. Some family members might like the new bread and some might not. At least they are trying new foods!

With any new cooking venture, you will need to take some extra time and effort to give it a try. Once you become familiar with some new recipes, you'll find that it gets easier and easier to add new foods to your family meals.

Our family is in the habit of going to a local farmers' market during the summer and fall to get farm-fresh fruits and vegetables. I admit that I have to work a bit harder during the off- season, when seasonal produce is less plentiful, to make sure that my plate is just as colorful. For overall health, eating a variety of fruits and vegetables is essential year-round.

A good starting place in your quest for color is the freezer case. Frozen melon cubes, berries, peach slices and even pineapple chunks are available year-round. Frozen spinach is one of my favorites for convenience-it is washed, cut and ready to be tossed into a soup or pasta dish. From a nutritional standpoint, it has just as much vitamin A and fiber as fresh-cooked spinach.

Next, stop in the canned fruit and vegetable aisle. "Our studies show that the nutrition value of canned fruits and vegetables is comparable to fresh and frozen varieties," notes Barbara Klein, Ph.D., professor of Food Science and Nutrition at the University of Illinois at Urbana. Dr. Klein points out that the canning process does not affect the amount of fiber in fruits and vegetables. Canned pumpkin, apricots, carrots and other orange fruits and vegetables are a rich source of vitamin A. "In fact, vitamin A levels in canned pumpkin are much higher than in fresh cooked because canned pumpkin is less watery and more concentrated," says Dr. Klein.

Most of us eat at restaurants for a variety of reasons; time and convenience are the most common motives. Below is a prepared list of quick tips for eating out of your home.

If you eat healthy food or sensible portions, that you like, you can stick with eating healthy for life.

Your portions should be spaced out over the course of the day. Water should be a part of every meal.

After you eat, your stomach should be half full, or less, with food. For every two parts of food consumed, you should drink one part water. Leave your stomach at least one quarter empty for movement of air.

When eating at a restaurant, eat half a portion, maximum, and wait five or ten minutes. Restaurant portions are commonly two to four meals on a single or double plate.

This is way too much to consume at a single sitting and you may find out that, once you pause and sip your drink, you are already full.

In the Providence, RI area, there are some restaurants where the single portions could feed a family of four. No wonder a man of 200 lbs. is now considered thin. Do not make comparisons to other people. Eat to live and enjoy your food, but do not use someone else’s over indulgence as an excuse for your own.

Establish control over your appetite. Most of us feel guilty if we don’t finish a plate. This is usually conditioning from your childhood. Bury your guilty past and have the rest “wrapped to go.”

Always eat something for breakfast and never “skip it.” When you skip breakfast, you will over-consume for it, later in the day.

Eat slowly and thoroughly chew your food.

Make sure your last meal, or last “snack” of the day, is small and nutritionally dense. Examples: Cereal with fruit, vegetable salad with olive oil and balsamic vinegar, rice with vegetables, and light popcorn, without the extra butter and salt. For those who eat meat or fish: turkey, chicken, or salmon salad on top of fresh greens.

In the later part of your day, skip desserts, sugary cereals, bread, and second portions.

If you absolutely must have sugar: Eat fruit, strawberries with yogurt or low fat cottage cheese, fruit with rice, or almonds with yogurt.


If you must have coffee or alcohol, beware that these should be consumed in extreme moderation. Both substances will dehydrate your body, and you will have to drink extra water to make up for it. Wine is much better than hard alcohol, but one or two glasses a day is the limit.
